Keralam Crab Masala Recipe: Traditional Crab Kochulli Masala
Crab Kochulli Masala is one of Keralam's most flavourful seafood dishes, prepared with fresh crab, small shallots, coconut oil, curry leaves and kudampuli (Malabar tamarind). Unlike thinner seafood curries, this recipe is built around a rich masala that clings to every piece of crab. The sweetness of slowly cooked shallots balances the warmth of the spices, while kudampuli brings the gentle tang that has become a hallmark of many traditional Keralam seafood dishes. Across Keralam's coast and backwaters, every family prepares crab differently. Some finish the dish with coconut milk for added richness, while others keep the masala concentrated, allowing the natural sweetness of the crab to shine through. This recipe follows the traditional style prepared in our kitchens.

Ingredients
Serves 4
Main Ingredients
1 whole fresh crab (cleaned and cut into halves or quarters)
½ cup small shallots (kochulli), thinly sliced
1–2 tablespoons ginger and garlic, finely sliced or crushed
1 medium tomato, chopped
2–3 green chillies, slit lengthwise
2 sprigs fresh curry leaves
2 pieces kudampuli (Malabar tamarind)
3 tablespoons coconut oil
½ cup coconut milk (optional)
Salt, to taste
Spice Blend
2 tablespoons Kashmiri chilli powder
1 tablespoon coriander powder
½ teaspoon garam masala
A pinch of turmeric powder

How to Make Keralam Crab Masala
Step 1: Prepare the Crab
Clean the crab thoroughly. Remove the top shell and cut the body into halves or quarters. Lightly crack the larger claws so the masala can seep inside during cooking. Season lightly with turmeric and salt.
Step 2: Cook the Aromatics
Heat the coconut oil in a heavy-bottomed pan or a traditional manchatti (earthen clay pot). Add the green chillies and curry leaves. Stir in the sliced shallots and cook gently until they become soft and golden.
Step 3: Build the Masala
Add the ginger and garlic. Cook until the raw aroma disappears. Reduce the heat before adding the Kashmiri chilli powder, coriander powder, turmeric and garam masala. Cook gently for about a minute, stirring continuously.
Step 4: Add the Tomatoes
Add the chopped tomatoes. Cook until they soften completely and blend into the masala. This creates the rich base that coats the crab.
Step 5: Cook the Crab
Add the prepared crab pieces. Mix gently so they are coated in the masala. Add the soaked kudampuli together with about half a cup of water. Season with salt. Cover and simmer over medium-low heat for 10–15 minutes, or until the crab is fully cooked.
Step 6: Finish the Curry
Once the masala has thickened and the crab is cooked through, stir in the coconut milk if using. Simmer gently for another two minutes. Finish with fresh curry leaves and a drizzle of raw coconut oil before serving.

Chef's Tips
Fresh crab always produces the sweetest flavour.
Crack the claws before cooking so the masala reaches the meat.
Kudampuli gives the curry its traditional Kerala tang and should not be replaced with regular tamarind if possible.
Coconut milk is optional. Traditional home recipes vary.
Like many Kerala seafood dishes, the flavours deepen after resting.

The Story Behind the Recipe
Crab Kochulli Masala reflects the everyday cooking traditions of Keralam's coast and backwaters. Rather than relying on elaborate techniques, the recipe celebrates a handful of ingredients that have long defined the region's kitchens: shallots, curry leaves, coconut oil and fresh seafood.
At Vedic Village Alleppey, these local traditions continue to inspire our menus. The recipe is prepared with respect for regional cooking methods, allowing the flavours of the crab and the landscape that nurtures it to speak for themselves.
